这几天的鬼天气,老是阴云密布的,说不准又来一阵大雨了。突发奇想,不如象语版上次那样搞个烤onclick="tagshow(event)" href="tag.php?name=%B2%E6%C9%D5">叉烧?只是没有烤箱罢了,也应该可以用微波炉做的吧(家里的微波炉是有烧烤功能的,哈哈!)
说做就做,去超市时,把该用的主料、配料都买回来了。
主料:隔沙五花肉(没规定你买多少);
配料:叉烧酱、老抽、生抽、蜜糖、花椒粉、料酒;薑、蒜茸、盐、糖、鸡精各少许;

过程:
1、肉冼净,用布吸干水分;行刑!请用刀拍打肉肉的PP吧(别笑!此举不算是酷刑。只是帮瘦肉部分松松筋骨,好让肉肉入味罢了!)如果是做肉扒,也要用刀背拍打、轻剁瘦肉部分的,这叫做放松运动。当然,皮是要切去的。

2、在肉肉的身上涂抹点盐、糖、薑蒜茸、花椒粉、料酒(去其肉腥味与增加香味);

3、用砵盛好肉肉,下点生抽、老抽(老抽够颜色的,增加色泽)。再下两汤匙叉烧酱(一斤多的肉下两汤匙就够了)一汤匙蜜糖全部往肉肉上涂均匀;
这是叉烧酱;

4、这是下好了配料醃制中的肉肉,准备放入冰箱啦;

5、用保鲜膜封好,放到冰箱里面醃制半天吧(起码三个小时吧,时间长好吸入味道),如果提前做好放一个晚上就很好了;

6、要入微波炉了。可是我家那个微波炉里面的烧烤架子早就丢失了,怎么办?
想办法,动脑筋嘛。有了,家里不是有蒸菜的不锈钢格子吗?利用起来就是很好的烧烤架来滴。
7、看见下面这两个架子吗?一高一矮的嘛。什么?不明白?笨笨。。。哈哈!

8、把其中一个反过来。中间那个圈圈是恰好套在一起的,卡住了的嘛,就算是在转动也不会掉下来的。不信你去试试呵。没有?去超市卖多一个就行了。这就是现成的微波炉简易烧烤架啦!

9、然后放在不锈钢碟子上面,很好用的。肉肉摆个圆形的放在架子上就行了呵。烤的过程肉肉会流出很香很香的叉烧汁,可不要浪费了(顺便告诉你一句,用来下面条、送肠粉是最好味道不过的了)。下面那个碟是用来盛肉汁的。知道了吧?!

10、瞧一瞧放到微波炉的肉肉是怎么样摆法的;最下面的是转盘;上一层是不锈钢碟;再上一层是简易式的烧烤架。最上一层呢?--肉肉啊,还用问?!@#¥%^&*。。。

11、有朋友问。我只有一个架子,又不想去超市买多一个回来。怎么办?容易啦,我还用了另一个方法,用烧烤的锡纸嘛。把锡纸沿着一个架子的边沿叠成这个样子就可以在上面放肉肉了。

这样还有一个好处。烧烤中的肉汁全盛在锡纸上,方便回收肉汁,你就等着美吧,用肉汁炒什么菜、豆仔的,可香哩!
12、这是用第二种方法做成的烧烤架。当然为了防止流失肉汁,我还是在下面放了一个碟子的;

13、放入微波炉后。用烧烤档位(因为肉块不算厚,我是用第一档就够了。如果火力不够,可以再次加时间的。总之要烤熟透了);时间第一次用8分钟;8分钟时间到了,取出来,帮肉肉翻个身,再次涂抹上蜜糖(当然也可以再搞点叉烧酱滴),再放入炉中烤8分钟(烤肉肉的另一面)。经过我的研究,建议把肉肉的肥肉部分向着外围来转动为好(因为瘦肉不耐烤,容易老韧)。
别听叉烧酱瓶子上说明写的时间。时间太短了,味道入不去,也不够香的。
还有的人试过,在时间短时,可以先把肉肉切成片片来烤,这当然可以。但是切成片是比较容易熟,但一不小心就烤焦了,时间上掌握就要缩短了,这个要注意滴。
14、这是刚烤好了取出来的整块叉烧啦,香极了!是不是可以与酒楼的比美呢?
