材料:杂鱼1斤多(这个鱼比较少见,应该是咸水鱼来的,忘记名称了,哈!)姜丝若干(多少自己定)、姜片三四片;
配料:生抽、白糖、料酒 、盐、生粉、胡椒粉、剁椒各少许;
过程:
1、冰鱼解冻,洗净;抹上细盐、胡椒粉,晾干水备用;
2、铁锅烧红,放油三至四汤匙,放姜片爆香捞起;
3、放入鱼在锅中摆好不动,用小火慢煎至一面金黄色;
4、看一下鱼块身锅那面,身下的粘上锅底变黄色就铲个翻身煎另一面变金黄色;如果不够油再加一点,别煎得太焦了粘锅(这过程是很考功夫与耐心的呵!);
5、看到鱼都煎成金黄色了,熟透干身了,放上姜丝、剁椒;
7、紧接着下匀好的芡汁(生抽、白糖、料酒 、生粉、胡椒粉等),再炒匀一点上碟完成。
