家常菜之“鲫鱼鸡脚五豆汤”

    去超市上买了各种各样的豆豆,既可煲汤也可煮粥食。今天用了五种相配的豆豆煲一个“鲫鱼鸡脚五豆汤”。

  材料:鲫鱼一条
  中医认为,鲫鱼有健脾利湿,和中开胃,活血通络,温中下气的功效。对于脾胃虚弱、水肿、溃疡、气管炎、哮喘、糖尿病等有很好的滋补作用。常食鲫鱼有补虚有功效。同时,鲫鱼的营养非常丰富,而且全面于先天不足,后天失调以及手术后、病后体虚形弱者是很有益的。肝炎、肾炎、高血压、心脏病、慢性支气管炎等疾病的患者经常食用,可以补充营养,增强抗病能力。

  鸡脚(爪)半斤:
  鸡脚性味甘平,有健脾益气、舒筋强骨的作用。它的胶原体有对皮肤美容润滑的作用。女士常食更好。

  花生:
  花生还有扶正补虚、悦脾和胃、润肺化痰、滋养调气、利水消肿、活血止血、清咽止疟的作用。

  芡实:
  芡实含有丰富的淀粉,可为人体提供热能,并含有多种维生素和碳物质,保证体内营养所需成分;具有固肾涩精,补脾止泄,利湿健中之功效。

  赤小豆:
  味甘,性平,健脾利湿、散血解毒。用汤加红糖,能补充缓急,有和血止痛的功效。此汤对小儿尿急、尿痛、小便不利有治疗作用。

  薏米:
  健脾去湿、舒筋除痹、清热排脓等功效;具有营养头发、防止脱发,并使头发光滑柔软的作用;使皮肤光滑,减少皱纹,消除色素斑点的功效。利于肠胃的吸收,身体常觉疲倦没力气的人,可以多吃。薏仁中含有丰富的蛋白质分解酵素,能使皮肤角质软化,对皮肤赘疣、粗糙不光滑者,长期服用也有疗效。

  眉豆味甘、性平、咸、无毒,入脾、肾经;具有健脾、止消渴、补肾、生精髓、和五脏、调营卫、理中益气之功效;眉豆好处说不尽,不但防癌、防血管硬化、抗衰老,还可帮助妇女解决经期的烦恼和更年期的种种痛苦。

  洗干净。

  薑一块,拍扁。

  制作:
  1、鲫鱼在市场买时去内脏。回家洗干净,晾干水分;

  2、起锅烧火下生油两面略煎香,冲下冷水在锅中稍烧一会;把鱼与锅中的水一同倒下锅中;

  3、锅中视家中人口分量再加清水,五种豆洗干净倒下锅中,放拍扁了的薑块下锅,加大火力煲半小时再转小火慢煎至豆与鸡脚软身;
  4、鲫鱼不必煲太长时候过烂了,半小时后捞上来加油、生抽可作下饭菜;
  5、下盐、糖、味精调味可喝汤,食鸡脚。
