手快有手慢冇

    上次试做了一锅酸甜小食,觉得对身体几有益,又开胃。这两天上去大信购物又想食了,于是继续卖了很多什么白萝卜、红萝卜、青瓜(现在很便宜,竟然卖到0.50元一斤)、绿辣椒、红辣椒等等。

   主料:白萝卜、红萝卜、青瓜、青红辣椒、姜片;

  配料:食盐、米醋、砂糖

  做法:

  1、白萝卜、红萝卜、小青瓜、子姜等洗干净后,全部切成幼条状,也可以切成薄片状;今次我加多了些辣椒,有点酸、甜、辣味更加好食;
  2、下食盐抣匀醃它一个小时,如果切成薄片可醃的时间短一些(醃的作用是把白萝卜的涩辣味去掉,同时可以让材料出水);
  3、醃完后用清水中洗掉材料的盐份,再把材料的水份挤出来,醃过出的水倒掉不要;
  4、把材料放在瓦煲中或玻璃容器中(不要金属制品容器);
  5、视个人口味倒下适量米醋、砂糖;
  6、用盖盖好,醃制两个小时。时间越长越入味;
  [注:切辣椒要戴个一次性的胶手套,别辣了手,否则切完后火烧一样的感觉。辣椒经过酸醋醃制后会变成少少辣味的了]

  开盖可食。味道酸甜爽脆,开胃可口,既可作餐前小食也可作家常零食。

  切成条块状。

  这是切好准备的主料,洗干净放到锅中用盐来醃。

  砂糖、食用白醋。

  用盐醃好的材料在清水中泡洗后,用凉开水过一下生水,然后挤干材料中的盐份与水分,再放到瓦煲中(瓦或玻璃的容器最好)

  重新放入瓦煲中,倒入砂糖,喜甜的就要多放呵。

  倒入白醋。

  盖起来醃它两个小时吧,其实一个小时也行,时间长一点就入味多一点。我用布围着盖上的,不让香味跑掉。

  醃它一晚或半天已经可以食了,一般酸、甜,稍辣的醃菜清香味,开胃、爽脆、好食!
